Crock Pot Chicken and Dumplings

To this day my grandma still makes the best chicken and dumplings I’ve ever eaten.  Cracker Barrel runs a close second but they are packed with fat from the cream.  This recipe lightens this heavy meal up a little bit, and still taste like grandmas!

what you’ll need:

  • 3 large chicken breast
  • 1 medium onion, chopped
  • 1 can cream of chicken soup 98% fat free
  • 1 can cream of celery soup 98% fat free
  • 2 cups fat free and reduced sodium chicken broth
  • 1 can biscuits
  • 1 tablespoon garlic powder
  • 1 tablespoon black pepper
  • salt to taste

Directions:

  1. place chicken in crockpot and add everything but the biscuits
  2. cover and cook on high for 3-4 hours, or until chicken is tender
  3. shred chicken into bike size pieces
  4. take 5 biscuits and flatten them out so you can cut into chunks
  5. add biscuit pieces to crock pot and cook another 20-30 minutes
  6. enjoy!

As you can tell most of these recipes require very little effort and are yummy but you don’t feel like you gained 10 pounds after you eat them.  I can do vegetables but I can’t be the grilled chicken on a salad type girl every night.  I need some southern comfort foods in my life!
